Making this corn pudding casserole from scratch without Jiffy mix and sour cream is super easy. It’s a great side dish to serve at Thanksgiving dinner or literally whenever. It’s the perfect cozy bake for holiday season.
This is such an easy recipe too. It’s perfect especially if it’s your first time making corn casserole. It uses really simple ingredients as well. Go ahead and make it for your next family gathering. Everyone will love it!

To make this corn casserole without jiffy mix, we need:
- Unsalted butter– Melted butter is an essential when making this delicious holiday meal. I mean, butter and corn? So good ❤. I usually use unsalted butter here. If you’re using salted butter, skip out on the added salt. It’s best to use real dairy butter when making this homemade corn casserole. It makes things rich and just… incredible.
- Onion– I love adding some chopped onion to this creamy corn casserole without Jiffy mix and sour cream. I feel this ingredient makes a world of difference here! It adds the most amazing deep savory flavor to this comforting side dish and really balances the sweet flavor from the corn and sugar. It’s delicious but you can skip out on it if you want a sweeter casserole without a savory touch.
- All purpose flour– We don’t have many dry ingredients here so all purpose flour is one of our super important dry ingredients. We add just a little bit of it to bind things up a little and give them structure while not making things too cakey. It also helps add to the custard-like quality of the corn casserole. We don’t use the regular Jiffy corn muffin mix and that’s not the texture we are going for here, boxed mix will make things more cakey and that’s not what we want here. We want things to be light creamy and custardy and all purpose flour gives us that here.. You can try using cornstarch instead of all purpose flour too.
- Half and half- When making this corn pudding casserole, half and half is essential to add to the creamy custardiness! Please use room temperature half and half for best results. You can use heavy cream or even whole milk if you like.
- Granulated sugar– Sugar really complements the sweetness of our corn here. It makes our casserole delicious… Filled with sweet savory goodness ❤. How much sugar you add when making your no Jiffy corn casserole depends on the sweetness of the corn you’re using. The amount I’ve added is usually a good amount of sugar and enough for me. You can add more or less sugar if you like. You can also try using honey, maple syrup or a sweetener of your choice here.
- Eggs- Eggs make our sweet corn casserole delicious rich and fluffy. They add to the structure and are super important here. I’ve added just enough so things don’t get really eggy. Please use room temperature eggs for best results. After extensive research when working on this recipe, I understood these amount of eggs are just right. It makes things not too eggy but still custardy and delicious.
- Whole kernel corn– I usually use canned corn when making this delicious corn casserole. Make sure you drain it though! You can use frozen corn or fresh regular corn too! You can use a mixture of white and yellow corn too if you like.
- Cream-style corn- You’ll usually find a can of cream-style corn at your local grocery store. If you can’t find it though, good news! It’s really easy to make at home! There are many different ways to make creamed corn at home if you search online but here’s a way that I find best- go ahead and grab a can of whole corn kernels. Then blend all those kernels with a little less than half the liquid that comes in the can and a tablespoon of all purpose flour until everything is chunky (don’t completely blend it all until it’s liquidy) and well that’s it!
- Salt and black pepper– Regular seasoning essentials! They cut through the sweetness and bring a balance of delish flavors along with our browned onions.
And well, these are the ingredients you need to make this cream corn casserole dish without Jiffy cornbread mix. It’ll be one of the best side dishes on the dinner table and I’m sure everyone will love it.
The best thing is, you can have this corn soufflé recipe on its own too. It’s the perfect comfort food.

HOW TO MAKE THIS CORN CASSEROLE WITHOUT JIFFY MIX RECIPE [Step-by-Step Instructions with Photos]
Please keep in mind that I go into lots of detail in all my recipes so you get to know all the super important tips and tricks when it comes to making a particular recipe. I always want you to make the BEST of whatever you’re cooking ❤.
STEP 1: GET THINGS READY!
Gently grease your casserole dish with some butter. I usually use a 10×8 inch baking dish here but you can use a 9×13 inch dish as well.

Also go ahead and preheat the oven at 350 F or 180 C. A preheated oven is important here.
Now finely chop your onion.
Take a medium or large saucepan and melt your butter over medium heat. Real dairy butter is always best.

To the melted butter add the onions and sauté for 4 to 6 minutes…

Until they turn a gorgeous golden brown.

Then turn off the heat.
STEP 2: TIME TO MIX!
Once the butter cools just a little and is not too hot but is still warm, gently add in your flour to the melted butter in the saucepan.

Gently whisk until it’s all mixed in.

Now if the mixture is still really warm, wait for it to cool even further. There’s a high probability of your eggs starting to cook if you add them to hot butter and we don’t want that.
Once the mixture has cooled down a little, add in the room temperature half and half, sugar and room temperature eggs…

And gently mix everything together.

Now add in your drained whole kernel corn and canned creamed corn to the mixture. Also add in the salt and pepper.

Mix the corn kernels and cream-style corn really well into the mixture.

Gently pour the entire mixture into your greased casserole dish.

STEP 3: AND BAKE 💃🏻!
Now pop the casserole dish into your 350 F or 180 C degree oven and bake.
No need to cover and bake with aluminum foil. Aluminum foil will prevent that caramelization from happening.
Coming to the baking time here, it completely depends on your oven. I usually bake my corn casserole for about 88 mins until the casserole is mostly set, a light golden brown on top and a darker golden brown around its edges. There’s usually a slight jiggle in the center since this is a soft pudding like dish but everything should be mostly set and not runny and soupy.
Oven times may vary here and your casserole may be done earlier or may take more time.
Go by the visual cues I’ve mentioned above and start checking your casserole from the 55th minute onward. Some ovens may be done faster while some may take an extra 15 to 30 minutes. This is a very forgiving dish though so don’t worry.
You can also broil your casserole for about 3 to 5 minutes on top once it’s done baking to get a darker more caramelized top! It gives our casserole a great caramelized appearance!
And that’s it, get your casserole out of the oven. I suggest letting it sit for about 5 to 10 minutes or even 10-15 minutes before serving.

And now go ahead and give it a try! There are so many different types of corn casseroles out there with boxed mix, cream cheese… etc. A good description of ours would be like more of a soft baked custardy corn pudding. It’s delicious!
Go ahead and serve this casserole at your next family gathering. It’s such a great side dish. It’s usually on the Thanksgiving menu or even served as a side dish at Christmas dinner.
You can serve it literally whenever you like! You did such an awesome job making it ❤! Now enjoy every last bit of caramelized goodness, you amazing person.

- Keep in mind that this corn pudding casserole without Jiffy mix may still be a little jiggly in the middle when it’s done (it shouldn’t be soupy though). You’ll know it’s done when it’s browned and caramelized in the corners and light brown on top. It’s like a soft fluffy soufflé.
- When making this corn casserole no Jiffy, allow it to rest for 5 to 10 minutes once it’s out of the oven. This will let everything set and really come together. This dish is more like a delicate custard and that extra setting time is pretty helpful.

- Got leftovers of this old fashioned creamed corn casserole? This is the first container of leftovers I go to after a dinner party! Wait for it to come to room temperature. Then wrap the casserole dish with plastic wrap or aluminum foil. You can also transfer everything to an airtight container. Then pop it into the fridge. It’ll be good for about 2 to 3 days.

HOW DO I MAKE THIS CORN CASSEROLE WITHOUT JIFFY MIX IN ADVANCE?
My first question when making a recipe as delicious as this homemade corn casserole without sour cream is if I can make it in advance, especially if I need to serve it at a party and need to save on oven space.
And well, this is a special occasion side dish so it’s always helpful to be able to make it in advance.

RECIPE & DIET VARIATIONS YOU CAN TRY
This easy corn casserole recipe is a staple side dish. With just a few minutes of prep, it will be a family favorite at your home.
It’s usually a part of side dishes when serving Thanksgiving dinner. It’s perfect for the holiday season… Indulgent, delicious and comforting would be a pretty good description!
And well hey, there are so many things you can play around with when making this creamy corn casserole. Here are a few ideas you can try-
- I LOVE browning my onions here. We sauté our onions in melted butter until they’re golden brown and delicious. It balances the sweetness of this dish and adds the most amazing deep rich flavor. You can skip out on this step for a sweeter corn pudding if you like though.
- You can also try using a dairy free milk as well as dairy free butter when making this delicious corn casserole recipe. I haven’t tried it this way yet though.
- To make things a little decadent when making this no Jiffy corn casserole, go ahead and use heavy cream instead of half and half. You can use whole milk instead too.
- I usually use canned whole kernel corn here but you can frozen or fresh corn kernels as well. You can also use a mixture of yellow corn and white corn!
- You can try using cornstarch instead of all purpose flour here.
- You can also add in fresh herbs when making this corn casserole without jiffy mix. Herbs like thyme, chives, parsley and green onion work pretty well.
- You can add some chopped chilis of your choice or even chopped jalapeños to add a spice 🔥. You can add hot sauce, paprika, cayenne pepper or some chili powder as well!
- You can add in some extra ingredients such as bell peppers (when you’re cooking the onions), cooked chicken, turkey bacon or any bacon of your choice or maybe even some vanilla extract to add a vanilla touch to that sweet baked creamed corn!
- You can add some warm spices too such as ground cinnamon, clove or whatever you prefer (I’ve seen some recipes add nutmeg, I haven’t really tried nutmeg here though).
- This homemade corn casserole is meant to be a little on the sweeter side. The amount I’ve given here is something I prefer, slightly sweet but not really sweet. But hey good news! You can add a good amount of sugar or even less sugar if you like, this depends on how sweet your corn is and how much sweetness you prefer.
- When making this baked corn recipe without sour cream and Jiffy corn muffin mix, I usually use granulated sugar but you can use brown sugar, honey or maple syrup. You can try using any sweetener of your choice! You can use a combination of sweeteners too.
- You can add some crushed crackers, saltines or even breadcrumbs on top of your corn casserole before baking it for a delish crispy crust!
- You can also add some cheese when making this casserole without Jiffy cornbread mix! You can add some sharp cheddar cheese to your creamy corn mixture before baking. You can also top everything up with some sharp cheddar cheese before baking! You can use any type of cheese your prefer here as well.
- You can bake large quantities of this casserole too. Go ahead and use a larger baking dish if you’re doubling this recipe. You can also bake in small ramekins! The baking time will change here so please keep a check on your dish while it bakes. I wouldn’t suggest using large disposable aluminum trays. You won’t get a great bake as aluminum is not a great conductor of heat. Your cooking time will change depending on your casserole dish!
- I haven’t really tried making this in a slow cooker but I think it’ll be possible. You can cook it on low for 5 to 6 hours or on high for 2 and a half to 3 hours. I feel the consistency won’t be the same if you make this dish in a slow cooker though.
This is a super easy corn casserole recipe which is perfect if you’re making this dish the first time. It’s made with super simple ingredients too (one of the best casserole recipes ever).
Go ahead and make this at your next family gathering, it’s such a great side dish and it’ll add so much deliciousness to your holiday spread, yum!
Note- If you think you have an ingredient that you feel is suitable as a substitute for a certain ingredient in this recipe, according to your dietary preference, you can use it and let us know how it works as a substitute in the comments below. I’ll then add it in as an adaptation suggestion here. This will help so many others with the same diet preference as yours.

There are many different ways to make creamed corn at home if you search online but here’s a way that I find best- grab a can of whole corn kernels.
Then blend all those kernels with a little less than half the liquid that comes in the can and a tablespoon of all purpose flour until everything is chunky (don’t completely blend it all until it’s thin and liquidy). And well, that’s it!
Yes, you can use frozen corn when making this delicious recipe!
I usually use canned whole kernel corn here but you can use frozen corn or fresh regular corn too! Make sure you thaw and drain your frozen corn before using it though.
This corn casserole is different from the usual corn casserole made with Jiffy mix and sour cream.
Our corn casserole here is soft, fluffy and light… almost like a custard. It’s also called a corn soufflé or a corn pudding and well, that’s exactly how the texture is supposed to be.
It’s supposed to be creamy custardy corn with deliciously sweet corn bites. This casserole is not supposed to be like a bread, it’s moist, creamy and custardy.
The first question I had was how to make it nice and soft and well, I worked hard to make this recipe all that 😍.
After extensive research (I really went all in haha!), I found out there are so many similar sounding recipes. There is the usual corn casserole made with Jiffy mix. Then there’s good old corn bread, a Mexican corn cake recipe and even a corn casserole made with cream cheese. Our casserole is different and is more custardy!
The baking time completely depends on your oven here.
I usually know my corn casserole is done when it’s mostly set, a light golden brown on top and a darker golden brown around the edges. There’s usually a slight jiggle in the center since this is a soft pudding like dish but it should be mostly set and not runny.
You can also broil it once it’s done for a couple of minutes for a great caramelized appearance 😍.
This corn casserole is supposed to be moist, soft, custardy and pudding-like but it’s not supposed to be runny.
If your corn casserole comes out runny, make sure you have drained your corn well if it’s canned. If you’re using frozen corn make sure it’s thawed and drained well. Also make sure you’re using proper measurements as I’ve mentioned here.
Also make sure you’re baking it in a 350 F or 180 C degree oven. You can use an oven thermometer to make sure the temperature is right.
What you can do immediately is try and bake it a little longer right until it turns light golden on top with dark golden edges. It may still wiggle a little in the center but it should not be liquidy or soupy.
To store leftovers of this baked creamed corn casserole, wait for it to come to room temperature. Then wrap the casserole dish with plastic wrap or aluminum foil. You can also transfer everything to an airtight container.
Then pop the covered casserole dish or airtight container into the fridge. It’ll be good for about 2 to 3 days. I don’t suggest freezing this dish as the texture may break apart.
You can reheat it in the microwave or oven until it’s deliciously warm and heated through.
