To cook the chicken: (Optional)
- Chicken breasts- Mmm, one of the most important ingredients in this easy recipe! I’ve cooked my own chicken here and I feel that adds so much flavor to this warm dip. I’ve used boneless skinless chicken breasts here. You can also use chicken thighs! You can also use canned chicken (I don’t really prefer canned chicken but it can be used in a pinch!) or even store-bought rotisserie chicken. You can boil your boneless skinless chicken breasts too. You can cook your chicken in an air fryer as well.
- Salt and pepper- Seasoning essentials!
- Garlic powder, onion powder and paprika- Extra ingredients such as garlic powder, onion powder and paprika add a delicious flavor to our chicken. You’ll be able to taste all those incredible flavors in the creamy dip too, yum 😍.
- Cooking oil- Use any neutral cooking oil you like to pan fry the chicken in!
- Garlic- Some smashed and minced garlic will add a delicious garlicky flavor to our chicken. The chicken will be so juicy and filled with flavor thanks to it being pan-fried, it’ll add to the flavor in our delicious dip!
To make the Buffalo Chicken Dip:
- Cooked chicken- You can use our cooked boneless skinless chicken breasts here for the most delicious flavor and texture ❤. You can also use shredded rotisserie chicken, boiled chicken or canned chicken.
- Hot sauce- I’ve used Frank’s red hot sauce here. It’s my favorite buffalo sauce! You can use Frank’s hot sauce as well or your favorite buffalo sauce if you have one! I love Frank’s hot sauce so much, I use it for anything buffalo at home whether it’s buffalo wings (always a classic), buffalo shrimp, buffalo chicken tenders or even buffalo cauliflower wings and buffalo broccoli wings, yum!
- Ranch dressing– Ranch dressing is creamy, tangy, rich and a little herby. It’s a delicious ingredient that adds to the creaminess and flavor of this creamy dip! If you like blue cheese, you can skip out on the ranch dressing and add blue cheese dressing instead. You can also sprinkle some blue cheese crumbles on top of your dip! You can sprinkle goat cheese too if you like or maybe even some feta! Or maybe some Parmesan cheese?
- Sour cream- Sour cream is our cream cheese substitute in this buffalo chicken dip recipe. It’s creamy and delicious with a hint of tang that works really well here. You can also use cottage cheese or full-fat Greek yogurt in place of sour cream in this easy buffalo chicken dip recipe. You can use non-fat Greek yogurt too for a healthy buffalo chicken dip recipe (healthy-ish!) if you’re on a low calorie diet and keeping a check on your daily values. You can use a combination of these ingredients too for a sour cream and Greek yogurt buffalo chicken dip or a buffalo dip with cottage cheese and Greek yogurt… It’s all your choice!
- Garlic cloves– Smashed and minced garlic cloves in a cheesy creamy warm chicken dip? It’s a flavor that’s unbeatable! Ah, this is one of my most favorite appetizers ever!
- Paprika– For a hint of spice!
- Onion powder– For a touch of onion-y flavor. Onion powder just elevates the flavor of literally everything out there.
- Cheddar cheese and mozzarella cheese- I’ve used cheddar cheese and mozzarella cheese, two cheeses for best results in my opinion… These cheeses help us get the creamiest, gooey-est, cheesiest most incredible dip ever! Trust me, all that cheesiness is gonna make people adore this and that’s why I suggest making it on game day or a party! This dish is a crowd pleaser! You can also use a mix of cheddar, mozzarella and Monterey Jack cheeses! Use whatever cheese you feel will go well here. I wouldn’t suggest low fat cheese though. That’s because low fat cheese may not melt well. You can use sharp cheddar cheese if you like the flavor.
- Green onions– I LOVE green onion here! We add some chopped green onions to our dip for the most incredible onion-y fresh crunch. Keep some more chopped green onions on the side to garnish with when the dip is done!

HOW TO MAKE THIS BUFFALO CHICKEN DIP WITHOUT CREAM CHEESE RECIPE [Step-by-Step Instructions with Photos]
Please keep in mind that I go into lots of detail in all my recipes so you get to know all the super important tips and tricks when it comes to making a particular recipe. I always want you to make the BEST of whatever you’re cooking ❤.
TO COOK THE CHICKEN: (Optional)
(You can skip this and use rotisserie chicken, boiled chicken or canned chicken. But I really suggest you cook the chicken yourself for the BEST flavor ever.)
STEP 1: GET THE CHICKEN READY
Ah, one of the best things about this recipe- Juicy flavorful chicken!
Take a large bowl and add your boneless skinless chicken breasts. I don’t cut my chicken yet and use whole breasts. I feel this gives us juicier chicken here!
Now add the extra spices to the chicken in the large bowl- pepper, garlic powder, onion powder and paprika.
Mix well.
STEP 2: COOK THE CHICKEN BREASTS
Heat some oil in a large skillet over medium heat.
Add the smashed and minced garlic once the oil is hot and stir for a minute over medium heat.
Then add your chicken breasts and cook on one side for 4 to 5 minutes.
Then turn the chicken and cook on the other side for another 4 to 5 minutes. Continue all this over medium heat.
Now this is optional but I usually check the chicken and cook it a little extra on the sides that aren’t golden brown enough if I want more browning on the chicken. I do this for another 3 to 4 minutes on each side.
Remove the chicken over a cutting board and let it cool.
TO MAKE THE BUFFALO CHICKEN DIP:
STEP 1: GET EVERYTHING READY
Preheat the oven at 350 ℉ or about 180 ℃.
While the chicken cools, shred your cheeses and mix them together in another bowl.
And once the chicken has reached room temperature or is not very hot anymore (or if you’re using rotisserie chicken, boiled chicken or canned chicken) start chopping up your chicken finely.
You can shred your chicken too but I love small meaty bits of chicken in my dip!
Set the chopped or shredded chicken aside.
Grease a large baking dish with cooking spray.
STEP 2: MIX EVERYTHING TOGETHER
To a separate large mixing bowl, add the buffalo sauce, ranch dressing, sour cream, smashed garlic, paprika and onion powder.
Mix well with a spatula or wooden spoon.
Then add the chopped green onions, the chopped/shredded chicken and half the amount of the shredded mixed cheese…
Mix well (I prefer a spatula here).
Pour mixture from the large mixing bowl into our greased large baking dish.
Add the remaining cheese on top.
STEP 3: TIME TO BAKE!
Bake at 350 ℉ or about 180 ℃ for about 20 to 25 minutes until the dip is gorgeously golden brown and bubbly.
An extra option once your dip is done baking: Broil for 3 to 5 mins or until the top is golden brown. I love that golden brown layer of cheese!
And get your creamy dip out and garnish with some freshly chopped green onions! It may be a little wobbly when you get it out of the oven. Don’t worry. It’ll set as it cools.
Serve your warm dip with celery sticks, tortilla chips, carrot sticks or however you prefer and take a bite. Isn’t that flavor and texture out of this world? ❤

This buffalo chicken dip is one of the most popular party dips out there so I completely understand if you want to make it in advance to be ready for a party!
The best thing is that this buffalo chicken dip recipe is super easy to make in advance. And there are so many different ways you can make it happen too!
So yep, let’s go ahead and discuss a few things you can do to enjoy this dip the next day:
- Go ahead and cook your chicken beforehand to save on time. You can chop or shred it as well once it comes to room temperature and keep it in an airtight container. Keep the airtight container in the refrigerator. You can also shred your cheeses and keep them in an airtight container in the refrigerator as well. Try and get as many ingredients ready as possible! Keeping ingredients ready in advance will make things easier when you choose to bake this dish.
- You can also just follow the recipe, mix and assemble everything together in your large baking dish. Don’t add the last layer of shredded cheese on top though. Then wrap the baking dish with plastic wrap and keep it in the refrigerator. When you’re ready to bake, get it out, top it up with the remaining shredded cheese and bake! I recommend doing this a day or two before your party.
- Or go ahead and bake your cheesy buffalo chicken dip. Then wait for it to come to room temperature, wrap it with a plastic wrap and store in the refrigerator. It’ll stay good for about 3 to 4 days. Reheat in the oven, microwave or toaster oven until warm throughout.
I personally prefer the first and second options because I love baking everything fresh. But it’s all up to you ❤.
PARTY Buffalo Chicken Dip No Cream Cheese (Easy!)
Ingredients
To cook the Chicken: (Optional, can use 3 cups or 18 oz of boiled and shredded chicken, canned chicken or rotisserie chicken as well)
- 1.5 lb or 680 gms chicken breast boneless, skinless (this about 3 to 4 breasts) (you can use chicken thighs too)
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- 2 tbsp neutral cooking oil
- 1 to 2 cloves of garlic smashed and minced
To make the Buffalo Chicken Dip:
- ⅔ cup or 5.5 fl oz or 160 ml hot sauce (use your favorite, I’ve used Frank’s Original RedHot)
- ¼ cup or 4 tbsp ranch dressing
- 2 cups or16 oz or 480 gms sour cream (can substitute with Greek yogurt or cream cheese)
- 2 cloves of garlic smashed and minced
- 1 tsp paprika
- ½ tsp onion powder
- 2 cups or 230 gms cheddar cheese (please use freshly shredded)
- 2 cups or 230 gms mozzarella cheese (please use freshly shredded)
- previously cooked chicken (again, you can use boiled, canned or rotisserie chicken too)
- 2 whole green onions freshly chopped (can keep some on the side to garnish the final dish)

Instructions

- GET THE CHICKEN READYTake a large bowl and add 1.5 lb or 680 gms chicken breast. I don’t cut my chicken yet and use whole breasts. I feel this gives us juicier chicken here!Now add ½ tsp salt, ¼ tsp pepper, ¼ tsp garlic powder, ½ tsp onion powder and ½ tsp paprika to the chicken in the large bowl.Mix well.
